Easy Chicken Salad

In honor of summer, I sought out to find an easy, yummy chicken salad recipe. I found and slightly modified this recipe on Pinterest, and it did not disappoint! I was interested to see if Parker would like it since it's so different from what I usually make, but he really enjoyed it! We both agree that next time we will probably leave out the green onions. They gave it a nice little kick, but we are just not onion people. Other than that, A+! It's easy to prepare early and refrigerate for an on-the-go meal. Not to mention, it's healthy! Convinced yet?

Ingredients:
3 cups diced, cooked chicken (I don't usually use canned chicken in recipes, but it would work here)
3/4 cup fat free mayo
1 cup red grapes, halved
1 green onion, diced
1/2 cup diced apple
1/2 cup pecans (walnuts would be delicious too)
salt and pepper to taste
optional: 1 stalk celery, diced

Directions:
1. Combine all ingredients in a medium-sized bowl.
2. Cover and chill for about an hour or until ready to serve.
3. Serve on a croissant or just by itself. Enjoy!


This is obviously a great lunch option, but I served it with summer veggies and sweet potato fries for an easy dinner too!

  5. this sounds good. I'm always wanting to make chicken salad but just want the chicken and mayo. there's a place 30 miles from here that makes the best chicken salad. but sadly they wont share the recipe.

  6. I used to not like chicken salad, but then I had a sandwich that was made with a similar recipe and now I'm hooked! I love the combination of grapes and apples, and I love the nuts. Yum!
