Ingredients:
3 cups diced, cooked chicken (I don't usually use canned chicken in recipes, but it would work here)
3/4 cup fat free mayo
1 cup red grapes, halved
1 green onion, diced
1/2 cup diced apple
1/2 cup pecans (walnuts would be delicious too)
salt and pepper to taste
optional: 1 stalk celery, diced
Directions:
1. Combine all ingredients in a medium-sized bowl.
2. Cover and chill for about an hour or until ready to serve.
3. Serve on a croissant or just by itself. Enjoy!
This is obviously a great lunch option, but I served it with summer veggies and sweet potato fries for an easy dinner too!

ReplyDeletethis sounds good. I'm always wanting to make chicken salad but just want the chicken and mayo. there's a place 30 miles from here that makes the best chicken salad. but sadly they wont share the recipe.
ReplyDeleteI used to not like chicken salad, but then I had a sandwich that was made with a similar recipe and now I'm hooked! I love the combination of grapes and apples, and I love the nuts. Yum!
