Fourth of July Cookies

Happy Independence Day America! Today I'm wearing that red, white, and blue and so excited for a day of relaxation and celebration. As we are all enjoying pool parties, days on the lake, BBQs, and floating the river, I hope everyone remembers why we have these luxuries. Brave men and women have paid the ultimate sacrifice for our freedom. Please join me in praying for all those overseas and away from their loved ones on this holiday.

And now for a delicious sweet treat to go along perfectly with today: Fourth of July Cookies

Ingredients:
2 1/4 cups flour
1 tsp. baking soda
1 tsp. salt
2 sticks butter, softened
3/4 cup sugar
3/4 cup packed brown sugar
2 eggs
1 cup red and blue m&m's (I used mini m&m's- if you like extra candy double the m&m's)
1 cup oats
1 cup coconut

Directions:
1. Preheat oven to 375 degrees
2. Combine flour, baking soda, and salt in a small bowl.
3. Beat butter and sugars in large mixing bowl. Add eggs, one at a time, beating well after each addition.
4. Gradually beat in flour mixture.
5. Stir in m&m's, oats, and coconut.
6. Place dough on a foil lined cookie sheet and bake 9-11 minutes or until golden brown. Let cool and enjoy!

We loved these because they were different, and the festive m&m's and coconut give them a nice patriotic look. Enjoy today!
