Ingredients:
1 cup oats
1/2 cup flour
1/2 cup brown sugar
1/2 cup chocolate chips (I prefer semisweet)
1/2 cup sweetened flaked coconut
1/4 teaspoon baking powder
1/4 teaspoon salt
5 tablespoons unsalted butter, melted and cooled
1 egg
1/2 teaspoon vanilla
Directions:
1. Preheat oven to 350 degrees.
2. Line a 9 inch metal baking pan with foil and grease foil.
3. In a large bowl, stir together oats, flour, brown sugar, chocolate chips, coconut, baking powder, and salt.
4. In a separate bowl, mix together butter, egg, and vanilla and stir into the oat mixture until fully incorporated. Spoon batter into foiled, greased baking pan.
5. Bake about 23-25 minutes or until set in the middle.
6. Remove from pan by lifting up the foil when cooled. Cut into squares and enjoy.
Fact: Like most things, this recipe was best right out of the oven. We could have eaten the whole pan right then and there!

Mmm, I love chocolate chip oatmeal cookies! And I bet the coconut makes them even better. Basically, it sounds like this is the kind of recipe that I too would eat straight out of the oven... without stopping until it's gone. :)
ReplyDeleteWe make these every year at Thanksgiving! Except we call them "Magic Bars". I think that's because it's the only dessert that everyone in our family likes so it's magic. Haha!
