Oatmeal Chocolate Chip Coconut Bars

That title is a bit of a mouthful, but these bars were delicious. I love baking new sweet treats for us to munch on during the week, and these somehow made us feel less guilty than others. The consistency is heavy on the oats, so it feels more like a bar than a cookie, which I really liked. Parker and I took one bite and were instant fans. Try them!

Ingredients:
1 cup oats
1/2 cup flour
1/2 cup brown sugar
1/2 cup chocolate chips (I prefer semisweet)
1/2 cup sweetened flaked coconut
1/4 teaspoon baking powder
1/4 teaspoon salt
5 tablespoons unsalted butter, melted and cooled
1 egg
1/2 teaspoon vanilla

Directions:
1. Preheat oven to 350 degrees.
2. Line a 9 inch metal baking pan with foil and grease foil.
3. In a large bowl, stir together oats, flour, brown sugar, chocolate chips, coconut, baking powder, and salt.
4. In a separate bowl, mix together butter, egg, and vanilla and stir into the oat mixture until fully incorporated. Spoon batter into foiled, greased baking pan.
5. Bake about 23-25 minutes or until set in the middle.
6. Remove from pan by lifting up the foil when cooled. Cut into squares and enjoy.

Fact: Like most things, this recipe was best right out of the oven. We could have eaten the whole pan right then and there!

  1. Mmm, I love chocolate chip oatmeal cookies! And I bet the coconut makes them even better. Basically, it sounds like this is the kind of recipe that I too would eat straight out of the oven... without stopping until it's gone. :)

  2. We make these every year at Thanksgiving! Except we call them "Magic Bars". I think that's because it's the only dessert that everyone in our family likes so it's magic. Haha!
