Ingredients:
2 eggs
1 1/2 cups white sugar
1/2 cup canola oil
1 1/2 cups flour
1 tsp baking soda
1/4 tsp baking powder
1 tsp ground cinnamon
1/2 tsp nutmeg
1/2 tsp ground cloves
1/2 tsp allspice
1/2 tsp salt
1 cup pumpkin puree
1/3 cup water
Directions:
1. Preheat oven to 350 degrees. Grease and lightly flour a 9x5 inch loaf pan.
2. In a large bowl, whisk together eggs, sugar, and oil.
3. In a separate bowl, stir together dry ingredients (flour through salt) and then stir it into wet mixture. Add pumpkin and water, and stir until well combined.
4. Bake for 1 hour and 15 minutes, or until toothpick inserted comes out clean.
Option: To make this more of a dessert, frost the top of the loaf with cream cheese icing.

ReplyDeleteYum!!! Pumpkin bread is by far one of my favorites!! My mom makes her homemade pumpkin bread every fall, and has since had to re-create it in a gluten free version for me so I can still enjoy it, and it is still oh so amazing!! I have yet to try and make a loaf... maybe I should this season!! :)
ReplyDeleteI generally only like pumpkin rolls (kind of like cinnamon rolls but pumpkin instead) but this pumpkin bread looks so good! I might have to give it a try.

ReplyDeleteI've never had pumpkin bread. I'll have to make this! I have a sweet potato bread recipe I'm posting next month. I think it's along the same lines as this, but with yams and not pumpkin. It's really sweet and good!
