Chicken Spaghetti

One of my favorite recipes is chicken spaghetti. I rarely make it, but it's almost always what I request from my mom when I go back home. It's just yummy comfort food that makes me feel like a kid again. Parker really likes it as well as long as it is chock full of chicken! Boys and their protein needs. Try this for a weeknight meal or a nice Sunday afternoon around the table with family.

Ingredients:
1 can cream of chicken soup
1 can cream of mushroom soup
1 can Rotel, drained (we use mild, but use what your family likes)
1 package of spaghetti
1/2 onion, diced
1 jar pimentos
2 cups cheddar cheese, shredded
1 cup cooked chicken, cubed

Directions:
1. Preheat oven to 350 degrees.
2. Cook spaghetti according to package instructions and set aside.
3. Meanwhile, saute onions in butter until translucent.
4. In a medium bowl, stir together soups, Rotel, pimentos, chicken, and 1/2 cup of cheddar cheese. Stir in sauteed onions and cooked spaghetti.
5. Pour mixture into an 8x8 baking dish and top with cheese. Bake 15-20 minutes or until cheese is melted.
