I don't know about you, but I get in such a rut with lunches. Breakfasts are easy because I eat cereal like it's going out of style, and I am always finding new recipes to try for dinner, but lunch just falls by the wayside. It's definitely the stepchild meal in our house. I wish I was one of those people that enjoyed eating a sandwich every day, but no such luck here. However, I recently discovered a new way to spice up my turkey sandwiches that I have been loving. This one was too good not to share!
Ingredients:
sliced cucumber
sliced avocado
cheese wedges, Sonoma Jacks or Laughing Cow
turkey breast
bread, toasted
There really aren't directions since this sandwich is all about assembly. Take a slice of toasted bread and spread one cheese wedge onto it. Add turkey breast, sliced avocado, and cucumber slices. Top with your remaining piece of toasted bread and voila!
The greatest thing about this sandwich is it's pretty healthy! You are getting some good veggies with the cucumber and avocado, and each cheese wedge is just 25 calories. I use wheat bread, so I felt really good about eating this sandwich. It tasted like something I would order at a cutesy cafe. I have been making it again and again!

ReplyDeleteI'm a non-sandwich eater, unless it's a grilled cheese, but this sounds like a great way to spice things up a bit! I'm not a fan of avocado but cucumbers would be so good!

Albacore Tuna is my go to sandwhich made with not so much mayonnaise, lemon pepper, dry dill weed, chia seeds, green apple (or red onion depending on what taste I'm going for), and walnuts or shelled pumpkin seeds.That sandwhich of yours looks SO good!

Yum!! I love avocado on my sandwich, but I spread it out like butter. I use it and/or hummus like most people use mayo.
